Korean-Mexican Fusion Tacos

Ingredients

  • 1 lb thinly sliced beef (ribeye or sirloin)
  • 8 small corn or flour tortillas
  • 1/4 cup soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • 1 tbsp sesame oil
  • 2 tbsp brown sugar
  • 4 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1/2 Asian pear, grated
  • 1 cup shredded purple cabbage
  • 1 carrot, julienned
  • 2 green onions, thinly sliced
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • 2 tbsp toasted sesame seeds
  • 1 avocado, sliced

Instructions

  1. In a medium bowl, whisk together soy sauce, gochujang, sesame oil, brown sugar, garlic, ginger, and grated pear to create the marinade.
  2. Add the thinly sliced beef to the marinade, ensuring each piece is well coated. Let it marinate for at least 20 minutes (or up to 2 hours for deeper flavor).
  3. While the beef is marinating, prepare your toppings: shred the cabbage, julienne the carrot, slice the green onions, chop the cilantro, and slice the avocado.
  4. Heat a large skillet or grill pan over medium-high heat. Cook the marinated beef in batches, about 2-3 minutes per side until nicely caramelized.
  5. Warm the tortillas according to package directions - either in a dry skillet, over a gas flame, or in the microwave.
  6. To assemble the tacos, place a few slices of the cooked beef on each tortilla. Top with shredded cabbage, julienned carrots, sliced avocado, green onions, and cilantro.
  7. Sprinkle with toasted sesame seeds and serve immediately with lime wedges on the side for squeezing over the tacos.
  8. For extra heat, serve with additional gochujang or your favorite hot sauce.
